New taco truck on East Main Street

NORWALK — There's a new taco truck in town. Elbia Vargas, who is from Mexico, opened up the Taqueria La Michoacana truck two weeks ago. Taqueria translates to a Mexican restaurant specializing in tacos and michoacana translates to a woman from Mexico. The truck is located at 124 E. Main St. — and it gets quite busy. One day last week there were more than 30 people sitting around under the trees enjoying their dinner at the restaurant. The truck is open for lunch starting at 11 a.m., but is closed Mondays and Tuesdays. Vargas' nephew Junior Vargas, who works in the truck, helped translate for his aunt. "They recently started this business," Junior Vargas says. "It's going well so far." "She likes to cook," Junior Vargas added. "She's always liked to cook. She has great recipes." Food trucks aren't new to the Vargas family. Elbia's brother operates the food truck that is parked near Walgreens. Vargas' food truck offers up tacos and quesadillas and she offers recipes with steak, chicken and pork. It also offers homemade salsa. Vargas said through her nephew that her plans for the future are only operating her taco truck. "If business is doing really well here, she'd like to stay here and do what she's doing now," the younger Vargas said. "She's hoping everything goes the right way and that everything is on the right path."
